Jane's Mama's Chicken Pot Pie

In my very first book, newly made vampire Jane's mama believes that she can make Jane human again if she just feeds her enough Chicken Pot Pie. Now, to address the many concerned emails I have received from readers- I love my own mom and my mother-in-law, who is the source of this super-easy mid-week after-work comfort food.

 

Each recipe yields two pies.

INGREDIENTS

Two packages - deep dish frozen pie shells.

Three 10.5 cans cream of chicken soup

One 15 oz can of Veg All

12-15 oz of fully cooked and chopped chicken breast

1/2 cup shredded Colby jack cheese

1 tsp Italian seasoning 1 tbsp garlic powder

1 tbsp onion powder

1 tbsp smoked paprika salt and pepper to taste

 

INSTRUCTIONS

Preheat oven to 350. Place two pie shells on a baking sheet. In a large bowl, mix soups, chicken, Veg All, seasonings and cheese. Divide the mixture between the two shells and turn the remaining two shells out of the pans, on top of the filled shells. Those will collapse and form the top crusts. Place the pies in the oven for 45 minutes to an hour. Watch the crust for browning. Cool 10 minutes and serve.
