Zed's Favorite Chunky Applesauce

Whenever Mystic Bayou​'s beloved bear mayor is feeling low, his maman makes him this applesauce. It's an excellent quick side dish for fall dinners like pork loin or meat loaf. The recipe is definitely not rigid. I literally made this up one day when a neighbor gave us a bunch of apples. So experiment, and find what works best for your family. Granny Smith, Gala and Fuji work best for us. Make sure you wash the apples thoroughly.

INGREDIENTS

12-15 freshly washed, peeled, cored and pared apples

1/2 cup brown sugar

2 tbsp ground cinnamon

2 tsp ground ginger

1 tsp ground allspice

1 tsp ground nutmeg

INSTRUCTIONS

Place apple slices in a slow cooker pot. Cover apple slices with brown sugar, cinnamon, nutmeg, ginger and allspice. Stir mixture until apples are evenly coated in sugar and spices. Set on low heat and leave apples to cook, stirring frequently. Eventually, the apples will get puffy and reach the "perfume" stage. (I call it that because it smells amazing.) Gently mash the apples with a potato masher until it becomes a chunky sauce. I will usually start the batch around noon and cook it on low until dinner.  Turn off the pot and cool for 10-15 minutes before serving.
